Here are some typical spanish food recipes from Spanish cuisine.

Classic "tortilla de patatas". Tortilla ingredients: for 6 persons - 1 kg of thinly sliced potatoes, half an onion, 8 large eggs Preparation: In a large bowl prepare 1kg of thinly sliced potatoes and sprinkle with salt over them .Then heat about ½ cm of olive oil in a large frying pan. When it's very hot add the potatoes and start to fry them but be sure to keep moving them so that they don't stick or start to brown.

When potatoes become ready add very fine chopped half an onion and mix the ingredients then cover it. In a bowl beat 8 large eggs with pinch of salt. If the potatoes break easily under the touch of the spoon they are ready and u can add the mix to the bowl of beaten eggs and mix them well.

Remove all oil from the pan. When the pan becomes very hot add the mixture and keep the heat at medium for a few minutes. Now put a plate over the pan and turn over the tortilla gently then return it to pan and turn it several times. When you put the knife into it and knife comes out clean tortilla is ready.

Gazpacho Ingredients: for 6 - 8 persons - 1 kg ripe tomatoes,1/2 medium onion,1/2 standard cucumber,1 green pepper ,1 cup olive oil, 2 soup spoons vinegar, some stale bread, cold water, 3 ice cubes.

Preparation: Place tomatoes in boiling water for about 30 seconds and then when you remove them the skins should come off easily then peel and seed them. Chop up the tomatoes, onion, cucumber and green pepper and put some of each ingredient in the blender and blend. Put gazpacho through a sieve and add water to get the thickness that you want. Put the gazpacho into a serving bowl, add the ice cubes and put it all in the fridge to chill. Serve gazpacho whit a plate of diced tomato, cucumber, pepper, croutons and add some cubes of ice.

Paella, most famous of spanish food recipes Ingredients: for 6 - 8 persons - 1 large onion, 3 cloves of garlic,1 large green and 1 red peppers, plenty but not extra virgin olive oil,1 chicken stock cube or a fish one if you prefer, 1 chicken chopped up into small pieces, 250g small prawns, 250g clams, 250g calamares in rings, mussels - 1 or 2 per person, short or long grain rice, 1 bag of frozen peas, 15 olives with red filling, lemons.

Preparation: Cover the bottom of a large, deep saucepan with the olive add the chopped chicken and stir until frying. Then throw in the chopped onion, pepper and garlic and fry away gently until everything is cooked and put this pan aside. Prepare prawns and the calamari rings and also wash the mussels and clams in another deep saucepan add saffron and chicken stock cube into a water and boil until all the shells are open then set the mussels and clams aside as we won't need them until the final stage. Now heat up the paella pan and add the contents of the saucepan containing the chicken, onions, peppers and garlic and also add rice then immediately pour in the yellow fish stock, stir and allow to boil very gently.

Now throw in the frozen peas and place the mussels also add olives with red filling. Allow the paella to cook gently for around 20 minutes, turning the pan occasionally to make sure that all parts of it are cooking equally. Place a few halves of lemon on top and place the whole paella pan in front of your very impressed guests.
